Vegetables keep low-sodium chicken dish from getting boring

Chicken breasts, again? Well, yes. But there’s nothing boring about these Spinach-Stuffed Chicken Roulades, and opting for low-sodium versions of the recipe’s onion soup mix and chicken broth as well as light or nondairy sour cream helps “The H Word” keep things on the healthy side.

The spinach and sun-dried tomatoes give the dish a hearty, rustic feel, and pairing it with mashed roots — a combination of carrots, parsnips, potato and cabbage — completes the theme.
