It’s St. Patrick’s Day and, while tradition calls for corned beef, ‘The H Word’ chef Mary Ann Suprenant picks smoked turkey as a healthier stand-in in this lightened version of a deli favorite.
A traditional corned beef Reuben can contain as many as 770 calories with 38 grams of total fat, 16 of them saturated fat.
Substituting turkey for corned beef and combining it with reduced fat or vegan Swiss cheese and a light version of Russian dressing cuts the numbers down to 510 calories and 13 grams of total fat, 6 of them saturated.
The preparation calls for a simple blending of canola or vegan mayonnaise, ketchup, horseradish, Worcestershire sauce and sweet pickles.
