‘The H Word’ takes on Mediterranean fish with easy sauce

Firm and mild meets spicy and tangy in Zucchini Wrapped Orange Roughy with Putanesca Sauce, this week’s “The H Word” recipe from guest chef Dawn Shultz of Franchesco’s Ristorante.

This Mediterranean-inspired dish requires some preparation deftness in slicing the zucchini very thinly on a mandolin so it can be used as a wrapper for the mild flesh of the fish, but quick and easy still comes in with the putanesca sauce.

Although the origin of its name isn’t entirely clear, putanesca sauce in any version generally translates as being made with the fruits of the market and with inexpensive, easy-to-find ingredients. This one combines fire-roasted tomatoes, capers, kalamata olives, basil and garlic to build up to its flavor peak.

The whole thing sits on a bed of lightly wilted spinach and invites you to mangia, mangia.
