‘The H Word' makes hearty and healthy ribs and potatoes

Some recipes just age well, no matter how you interpret them, and "The H Word" chef Mary Ann Suprenant hits the right note with Balsamic-Braised Short Ribs with Horseradish Mashed Potatoes — her take on a hearty classic.

The protein portion of the dish begins with four pounds of beef short ribs, which is a cut from the chuck section of the cow. That means it has a lot of connective tissue and needs slow, moist cooking.

Peppers, onion, garlic and plum tomatoes combined with red wine and balsamic vinegar infuse their flavors into the meat during 90 minutes in the oven.

The potatoes get a health-conscious upgrade with warm soy milk and fat-free sour cream providing the moisture during mashing before the horseradish brings on the bite.
